I searched quickly for this on Google but like most iPhone resources, nothing turned up.  Eventually, I did find a place to change it.   In fact, I found two places - both equally counter-intuitive.

In XCode… 

You can either select Menu:   Project > Edit Active Target “your app name”

Or you can right click (ctrl click) on the target beneath the “Targets” node in  your project tree and choose “get info”

From there, click the “build” tab.  Scroll down to “Packaging”.

Change “Product Name”
